Strawberry Pearls from Purée

  1. Dice about 4-5 fresh strawberries
  2. Add sugar to taste, if desired
  3. Add 25 mL of water and blend until completely puréed, removing all chunks
  4. Blend 200mL of the fresh strawberry purée with 100mL water
  5. Blend in 1 tsp sodium alginate
  6. Pour in Spherificator
  7. Create calcium bath in a separate bowl (1 tsp Calcium Chloride in 500mL water)
  8. Spherificate!
  9. Rinse and serve
